Boppa’s Wild Rice Soup
Ingredients:
10 cups of water
4 chicken bouillon cubes
3 celery stalks (finely chopped)
1 1/2 pounds of boneless skinless chicken
1 cup wild rice
2 tsp parsley
2 tsp basil
2 tsp minced garlic
1 tsp Worcestershire sauce
1 cup white rice
2 cups coin cut carrots
2 cans cream of chicken soup
2 cups milk or (half and half, or cream)
In a 6 quart pot, combine water, bouillon, celery, chicken, wild rice, parsley, basil, garlic, Worcestershire sauce and bring to a boil. Reduce heat and cover. Simmer for 45 minutes.
Remove chicken from the pot and cut into small pieces and return to pot. Add white rice and carrots. Return to boil. Reduce heat, cover and simmer for 30 minutes.
Stir in cream of chicken soup until thoroughly blended. Stir in milk and return to boil. Reduce heat and simmer for 5 minutes. Serve with oyster crackers and bread sticks.
