Boppa’s Wild Rice Soup

 Boppa’s Wild Rice Soup


Ingredients:
10 cups of water
4 chicken bouillon cubes
3 celery stalks (finely chopped)
1 1/2 pounds of boneless skinless chicken
1 cup wild rice
2 tsp parsley
2 tsp basil
2 tsp minced garlic
1 tsp Worcestershire sauce
1 cup white rice
2 cups coin cut carrots
2 cans cream of chicken soup
2 cups milk or (half and half, or cream)



In a 6 quart pot, combine water, bouillon, celery, chicken, wild rice, parsley, basil, garlic, Worcestershire sauce and bring to a boil. Reduce heat and cover. Simmer for 45 minutes.

Remove chicken from the pot and cut into small pieces and return to pot. Add white rice and carrots. Return to boil. Reduce heat, cover and simmer for 30 minutes.

Stir in cream of chicken soup until thoroughly blended.  Stir in milk and return to boil. Reduce heat and simmer for 5 minutes. Serve with oyster crackers and bread sticks.

Boppa’s Chicken Noodle Soup

 Boppa’s Chicken Noodle Soup

Ingredients:

12 cups of water

4 chicken bouillon cubes

3 celery stalks (finely chopped)

1 1/2 pounds of boneless skinless chicken

2 tsp parsley

2 tsp basil

2 tsp minced garlic

2 cups coin cut carrots

In a 6 quart pot, combine water, bouillon, celery, chicken, parsley, basil, garlic and bring to a boil. Reduce heat and cover. Simmer for 45 minutes.

While soup is simmering, start making the homemade egg noodles. Or make the noodles before you make the soup and let the noodles dry on a towel while you are making the he soup.

Remove chicken from the pot and cut into small pieces and return to pot. Add carrots. Return to boil. Reduce heat, cover and simmer for another15 minutes.

Bring the soup to a rolling boil and slowly sprinkle and stir the homemade egg noodles into the soup. Return to a boil, reduce heat to medium and cook uncovered for about 20 minutes.

Serve with oyster crackers and bread sticks.

Helpful hint for making egg noodles below: add the water 1 tablespoon at a time until you get the correct consistency.
